Chinese is set in 1970 at a Chinese restaurant named Orientals. It is seemingly the hideout/rendezvous of a gang, which Detective Harry Tipper and Lieutenant Christine Malone must investigate. All the members of staff are hostile in this mission, so it could be assumed that they are all part of the gang.
It is widely assumed that Mr. Big is in-charge of the Chinese gang, although this is not officially set in stone.

You start out in the dumpster area outside of the Kitchen in this level. Go forward and take a slow right through the outside while hiding behind walls and shooting the Hoodlums that peer out. Watch out for those hiding in the corners of the map and the Chinese Waiters across the windows of the Chinese Restaurant. As you progress, you'll encounter an alleyway leading to the entrance of the restaurant except it's layered with explosive crates and enemies lobbing grenades as you progress. Shoot the crates and taking care not to be caught in the explosion whilst taking a hard turn right into the restuarant. Enemies will be upstairs as you enter so take consideration by looking up as you enter, Mr. Bigs will be there to greet you with lead. Retreat and return to shoot the enemies by luring them out is another choice. Take a right as you get upstairs, slowly strafe and attack the Chinese Waiters who lurk in the corners (if you haven't shoot them outside through the windows!). If you happen to take a left, you will meet Mr. Big opponents and a dead end with an Armour pickup. When you get inside the kitchen, Chinese Chefs will be waiting to shoot you, so take this slowly to ensure perservation of your health bar. There should be a doorway that leads downstairs but be careful as there is a Sentry Gun. Destroy the sentry gun. Continue left downstairs in the tunnel. There will be about 3 or more enemies hiding near explosive crates. Shoot any of them whilst they are near to kill them in the blast radius. When you get to the end, two Mister Big opponents will be around the corner, strafe and shoot them. At the same time swipe the suitcase and be wary of the incoming Timesplitter spawns. Backtrack the route you entered, back up the stairs, through the alleyway, shooting any of the Timesplitters if they happen to be blocking you back to the place you spawned and you should have completed your objective!

Trivia[]
- The kitchen doors open about 0.3 quicker on NTSC version of the game than on PAL.
- On Easy, you can open the door on the furthest side of the kitchen, once you obtain the evidence.
- On Normal, you can open the door next to the exit of the kitchen, once you obtain the evidence.
- On Hard, you cannot open any of the kitchen doors.
